178 Days to go!

Should I already be counting down?! We have big plans this year. One of which is raising money to take a trip to France this year. We want to experience great food and culture and where better to do that than in another country?! We will try our hardest and if for some reason, we do not make it we will default to New Orleans (we'll still be able to speak French!). This year I have high expectations from my students. They have all taken my classes before so they know me and know how to work with me. I think it will be a great year because of all of the dynamic personalities and unique cross section of students that I have. This is why I love teaching this class, you get students from all over campus! I'm really looking forward to the year and will try my hardest to keep this blog updated as much as I require my students to update theirs!! We'll see how that goes...wish me luck!

179 to go

A new year!! I have 11 very cool kids in CAIII this year (just like every year!) and we are already off to a great start. I am committed this year to taking them as far as they want and need. I want to win the competition this year and get some scolarship money flowing to Fortuna! That is definitely one of my goals... The Club has decided that they would like to pursue the option of traveling to France this year for our class trip. It will be a giant commitment and a lot of money but if they work hard enough, I bet we can make it! I guess I should start planning now!

Moving right along...
We have done 2 lunches so far.
For lunch or dinner this week, we are offering the following:
Roasted Chicken or roasted vegetable fettucine alfredo. Both of these will be served with a homemade roll and apple upside down cake.
We are doing okay in numbers but would really like to get out there a bit more so call us! We are worth it and only $6, how could you go wrong?

Four Weeks In

Funny that I had all of my students set up their blogs and even do a few entries and here I am with nothing entered since last year.
I will try and be better about keeping up to date.
This week we are starting our staff lunches again. We are trying to branch out and serve other interested people as well. We have managed to gain Ambrosini school's faith and they are a big part of our Friday business. Now we are ready to find more people interested as well.
If you are in Fortuna on Friday's give us a call, we would be happy to add you to our list. I will start putting our weekly menu on this blog so that you can always check back to see what we will be offering.
This week we will be making a Thai soup called Tom Kha Gai which is made with coconut milk and chicken but what really sets it apart is the galangal root and kaffir lime leaves that the soup calls for. It is so good. We are also offering a vegetarian version with tofu instead of chicken.
Along with the soup, you will get a vegetable spring roll, a bottle of water and a coconut lime whoopie pie. The whoopie pie isn't exactly Thai but the flavors are. Every week for our desserts we take something familiar and try and give it a twist so that it can fit with our lunches. This week it is the whoopie pie's turn! Last year we did A LOT of cupcakes and have decided to take a break from those and work on a few different current trends. I think we will be focusing on individual pies and tarts, verrines, whoopie pies, and ice creams to name a few.
I should mention that our lunches can also always be purchased as a dinner and any of our desserts can be purchased separately as well so if any part of our lunches sound good, let us know!
With the money that we earn on Friday's and on other fund raisers throughout the year we will partially be paying for our trip to Chicago. This year we are going to try very hard to make it to the National Restaurant Association Food Show. It will be really great because we will get to see a whole different side to the food industry. There will be so many people there talking about what's new in the industry as well as celebrity chefs, mini classes, etc. Also while in Chicago, we will try and visit favorite local restaurants and bakeries, meet with industry professionals, tour some hotels and so on. Annual Cheese Tasting

Today was the day that apparently we have all been waiting for. Who knew that I would be surrounded by a group of high school girls that love cheese as much as I do?! That is a match made in heaven. So now, we have definitely added Murray's Cheese shop to the list of places to visit on our trip to New York. This is a place that I have been wanting to go but never really had the buy in from the students...until now! So that is good news.

International Street Food Time

Now that we have the holidays and huge fundraisers that come along with them behind us we can get on with some student projects!
This is one of my favorite projects of the year. There is history, technology, and cooking all wrapped up into one.
